Essential oils are produced by the plants for various reasons, for the transpiration of water through their leaves in the summer months, for attracting insects, acting as pollinators, for self-immunity against herbivorous animals and diseases and many more, luckily for us, they carry several beneficial properties for the humans. They comprise of organic compounds, mainly of a mix of aromatic esters and/or ethers, and can be collected via high pressure, elision, extraction or steam-distillation from parts of the plant, like the fruit, the leaves, the roots, the bark of the seeds.
